The historic Zirmstube is a place that grounds you. Homely, reverent, yet full of life and pleasure. Here we serve the counter-design to stiff, classical elegance. Our philosophy is noble-rustic: nose-to-tail, consistent, and with deep respect for the produce. We work with whole animals, combining briefly seared loin cuts with braised pieces such as cheek or shoulder. From honest craft we draw out the best flavour – with a touch of Alpine-Mediterranean lightness and the most important ingredient for hearty dishes: time.
